Leviticus 22:28 does not explicitly state why God gave this command, but it is reasonably understood as teaching compassion and restraint, even in the offering of sacrifices.

Sacrifice involved taking an animal’s life, but that did not give Israel permission to treat life carelessly. A reasonable application is that participation in religious duties should never make a person hardhearted.

Why the same day specifically? Scripture does not explain that detail. The command did not prohibit sacrificing either animal altogether; it prohibited killing both on one day. Compassion and reverence for life fit the surrounding biblical teaching, but they are an interpretation of the reason, not a reason expressly supplied in verse 28.
For us, the practical lesson is that honoring God includes both obedience to His Word and care in how we treat His creatures.
